Scrapple is the floor sweepings from the sausage plant boiled in corn meal, with lots of spices and black pepper. Drained and allowed to set up in a loaf pan, then sliced and fried on a griddle. Every PA Dutch grandmother had her own recipe which she passed down to the next generation.

Yes sir!!! I can get the 1+ inch links of Italian Hot sausage, smoked sausage, Kielbasa, and Cajan sausage at our local market. Cook them in a frying pan and wrap them in a soft tortilla shell. Sometimes with Swiss cheese?

OK, speaking of sausage, Zina bought some nice big bell peppers, sweet peppers I call them, at Aldi's last week. I said "what are we going to do with all these peppers?" She said "I don't know, they were on sale".

So we put some in the freezer and while I was looking in the freezer I took out a package of Italian sausage. After they thawed I browned them in a skillet on all 18 sides then added them to the pot of sauce I had simmering. I had an onion chopped up, 2 of the peppers sliced, a handful of Italian seasoning, and a jar of Ragu in it. I let the whole thing just simmer away most of the day, and it was delicious. The sausage made an excellent sammich and the next day the sauce with some spiral noodles was delicious too.

Tom, I have a 20 quart restaurant type pot.. 2-3 lb of hamburger, 2-3 lb of crumbled hot sausage, all browned, 2 big onions, 2 bell pepper, big box of fresh mushrooms, #10 can of tomato sauce, a whole bunch of Italian seasonings.. Let it cook all day and Umm Good spaghetti dinner!!! Put the left overs in 2 person sized portions, in the freezer. Cook some more noodles while sauce is nuking and Viola quick dinner..
