Here is this year's prime rib- it was a big one because we had some friends and family over for dinner. It was close to 20 pounds. Coarse grind black pepper and sea salt and granulated garlic rub- that's all you need. Room temperature, into the oven at 450 for 40 minutes, then back the oven down to 350 for two hours. At the two hour mark, check your temp (no not your temp Tommy, the prime rib's temp) you are looking for about 125 to 130 internal temp. Pull it out, tent with foil and allow to rest for 30 minutes. The photo of it sliced open is the result. This year's side dishes were Yukon Stacked Potatoes (It's a Disney Resort recipe, kind of like Potatoes Au Grautin, very good) I also made carrots with cranberries (first time try, was good but I want to adjust some things) and I also made green beans sauteed in butter, olive oil and garlic.

I tried the prime rib rub on my London Broil roast today.. Baked it to 140 degrees and it came out just right. Added a small can of bits and pieces mushrooms to the package gravy mix. Topped the dinner off with mashed potatoes and mixed vegies.

Can you email me the recipe for the crust?? If it does not have any flour in it? My son who is Gluten free can try to build one.

2 cups cottage cheese.... 2 eggs.... 1 tsp of chopped garlic.... 1/4 cup of grated parmesan cheese.  Whip it all together by hand with a wisk.

Take a cookie pan and put parchment paper on it, rub it with olive oil.  

Pour the mix on the sheet pan and spread it out.  

My mods.... i used a whole 24 oz. Tub of cottage cheese, 1/3 cup of parmesan, 1 more egg, and a sprinkle of shredded cheese.  The extra shredded cheese made it a little greasy, so you can leave that out. You can see the herbs in the picture.  Its oregano, basil, and crushed pepper.

Bake at 400 for 30 -40 minutes. After 30 minutes you can lift a corner to look at the bottom to check doneness.  We like it crisp.  

When you like what you see after 30 minutes , pull it, let it cool 15 minutes,  then put the toppings on it.  

We went simple.  Dont know how good a loaded pie will do.... then put it back in the 400 oven for up to 15 minutes. Pull it, let rest, then enjoy...
