Tom... reading your post made my blood pressure rise.. Now i need to take a 16 oz. Dose of blood pressure elixer... Just sayin.  I liked the way you made it work..

We did pretty much the same as every other year except there were only 9 of us instead of 25 with 6 people in floriduh, 4 in commifornia, and 6 in japan.

when you are up to your armpits in alligators,

it is hard to remember you only came in to drain the swamp..

I like to salt and pepper it some and let it set in the fridge for about a day or so, then pull it out and coat it with some butter and a premixed recipe called Prime Rib rub from Kinders.

Thanks!! I will have to look for it at the grocery store.. Will also have to try the lower heat and longer time on my next roast..

Hey I should mention that the Sous Vide method is basically a water bath. It requires a vacuum seal bag and a circulation pump to heat the water. Keeps the temp really consistent on the meat, you cant mess it up. Its a little unconventional,  but it's the best method I've ever found for prime rib. Basically takes the guess work out of it. 

After its finished in the sous vide,  I sear it at 500° for about 10-15 minutes to get a nice outer crust.

Joey i see you're into the smoker stuff. I've been thinking of someday trying a prime rib in the smoker. I heard people do it, but id have to read up on the particulars.

You haven't by chance done such a thing have you?

No prime ribs.. my wife wont eat it. I love it done like you did yours. Even if I had a pot of Ojux to cook hers to medium well, she still wont eat it.

Ahhh man. Yeah I understand what you mean. My wife wont eat it either.  Luckily our kids love it and so do i so im lucky there.

 

Yes, the aujus and creamy horseradish sauce with prime rib is hard to beat!
