Shouldn't be air assist on an 05, might be a bent cable, best guess is lack of grease on the clutch fork and a heavy aftermarket clutch.

Disconnect the cable from the clutch arm and pedal and operate it by hand, there should be some resistance but not much if you can move it by hand its ok. Make sure the clutch fork bushings and throwout bearing are greased and moving freely. Remove the inspection plate when you grease the throwout bearing and make sure the tube isn't cut and grease makes it to the bearing. What kind of clutch did you put in it? My 04 had a stiff clutch too, but i didn't use it unless I was taking off.
