    Because you would probably starve as a farmer.

    On a serious note -

    If I were to cook baby back ribs - what would be the best way?

    I'm thinking charcoal with the fire indirect to the meat and slow

    cooking for a couple of hours. But I've heard a lot of different opinions.

    And I could do them on a gas grille.

    Or should I cook the meat in the oven first, then transfer it to a grille

    for finishing?

    Should the sauce be put on early in the process or at the end

    of the cooking? And should the sauce be allowed to carmelize on the meat?

    I've got a new favorite recipe for ribs,saw it on the food channel show "Down Home With the Neeleys" and I've done it a couple of times,and it's great,very tender.

    Yes,after you peel off the membrane from the inside(very easy,much easier than skinning a catfish)cook them with indirect heat with the curved side up first (meatier side down),'til they're half done,then turn them over and cook them 'til they're 2/3 done. Then wrap them up tight in aluminum foil and finish cooking them.They said by the time you wrap 'em up they've already gotten the charcoal/smoke taste,and they baste in their own juices in the foil. That's when i'd add sauce,when you seal them in the foil.You don't need to put them in the oven or boil them first,when I did this recipe you could grab the end of a bone and pull it right out,leaving only the meat.Best and tenderest I'd ever cooked. I still use the "boil in beer,garlic and bbq sauce" recipe for the country style ribs,but for spare ribs and baby back ribs the is the best recipe i've tried.

  4. wow,rough week-sort've a good week and bad week in one. I know exactly what you're saying about the American products. I was talking to one of our drivers in Ambridge Pa. Tuesday morning after we both unloaded at the same place and the conversation got around to all the steel mills that have gone out of business. I told him that a lot of them have no one to blame but themselves in my opinion. I've been hauling steel for close to 30 years now,and many times i've sat and waited all day and half the night to get loaded. U.S. Steel was one of the worst. Loaded at Copperweld in Warren,Oh, once and when I finally got to back in a door that night,after sitting there all afternoon,I had one more lift of bars to go on the truck when the craneman took the crane to the far end of the building and climbed down the ladder.I asked the foreman/supervisor what was going on-she said their shift ended in 30 minutes. So I said "but there's only one more lift-and i've already been here all evening and half the night!" She said "sorry,it's in their contract.They get 30 minutes at the end of their shift to shower and change clothes" And the 11 o'clock shift coming in got 30 minutes to change from street clothes into work clothes of course-and got paid for it! They should do that at home! By the time I finally got that last bundle loaded,chained down,got the paperwork processed,it was 3:00am! Now when I pass through Warren on rt. 82 &5 and look over where Copperweld used to be I kind of smile,because it looks like a bombed out pile of rubble now...same as when I pass what used to be LTV on rt.21 in Massilon,Oh. Most of that has been demolished for real,but it's hard for me to feel sorry for steelworkers when you see them on TV talking about how they lost their jobs to overseas companies,when they were inefficient and overpaid to start with.They couldn't care less whether or not the trucks got loaded,they just stood around for 8 hours a day for the most part,treated truck drivers like they were the scum of the earth, and drew a huge check on Friday...still makes me hot!

  5. Shucks, you were right in my neck of the woods. I was born in Alpharetta. It has grown. and changed so much that is getting more difficult to get around. Forty years ago, Alpharetta had an all volunteer fire department. When the fire siren went off everyone cleared the sidewalk as well as the streets. Since the first one that got to the fire station got to drive the fire truck, it could be pretty exciting.

    it's a busy place all right,traffic everywhere!

  7. Don't feel bad buddy tuesday I got up at 5:15a.m. Layed in the bed till about 5:50 and said the hell with it and went on into work. We open at seven, but the boses get there at 6:30 I beat them there by 15 minutes. Back on point, Have fun at the show, which by the time you read this you will have returned, anyway glad to hear about the mixer you know why they wanted it there? They had to have a good lookin' truck on the lot. Have a good one buddy......

    I'm back,had a great day! Took over a hundred pictures! Stopped by Food Lion in Altavista on the way home,got a couple of steaks and cooked them on the grill. Now I've got to figure out what to do with all those pictures...perhaps put them on a disc and send it to Barry? That's the easy way out, takes a long time to put them on webshots or flickr!

  8. Joe, it looks to me like almost anything goes in Canada.

    I'm guessing that the roads have a big frost heave problem,

    and so the loads are bridged over a lot of axles to minimize

    the impact of the truck on the highway.

    Just a guess, but it sure does sound intelligent doesn't it?

    Anyway, I saw a lot of different combinations of axles and

    multiple trailers. Some pretty nice trucks too.

    Got a break coming home. Pulled up to Customs at the border,

    and was behind three loaded busses. The Border Patrol checks

    your passport now. And it was going to be a looooong wait behind those

    tourist busses. I got waved into an adjacent lane, that was closed,

    but apparently the guard saw me and felt sorry for me. (Or they didn't

    want me in Canada any longer than absolutely necessary)

    Really nice of him - because I think I'd still be there if I had to wait for

    the tourists.

    So,all that "try not to look suspicious" practice worked out for you,eh? (that's Canadian) :D

Hey Joe,glad you got all that scraitened out (that's e-well,never mind ) Did you change your number-I tried to call you yesterday and today when I was going through Knoxville.Went to Birmingham yesterday with a load of pipes,deadheaded 3 miles and reloaded 3 coils.Left Birmingham at 10:30 this morning,got back to the south Lynchburg Truckstop at 8:30 tonight. And stopped at Bulls Gap and got fuel and 2 cheeseburgers and an order of fries(dollar menu!)

  10. you may be right Paul,but Other Dog (the beagle) read this first,and it really hurt his feelings...he said he was on his break when the incriminating picture was taken,and now he's afraid his reputation may be permanently harmed...he may need therapy. He also stated that we hardly ever see a duck-billed platypuss or an armadillo in the garden,but he gets no credit for that...I apoligized to him for doubting his ability as a guard dog...when he wakes up i'm going to tell him what a fine job he's doing. I wouldn't trade him for a thousand of them pekanese or what ever-they-ares!

    As an ex Law Enforncement Officer "Rent-a-cop" I found that every dog has his day..lol...And that everyone has to take a break. Maybe you can hire him a sidekick, or some kind of alarm system for when he's "Off Duty". I say him and Jobyna sit in the bushes in camoflauge while your at work just trying to catch them waskally wabbits. Tell him to keep up the good work.

    actually,he already has a sidekick. As you can see in the latest picture he's not much of a go-getter either!

    He's my truckin' hero...Paul VanScott runs a close second. I've read all of Old Bill's stories,and talk to him on Skype every weekend...all because I sent him an e-mail once and told him he was the greatest truck driver ever...which he is,in my opinion-Paul VanScott runs a close second.

    I put the owl back in the garden last week,haven't seen the rabbits in it, (of course there's no beans for them to eat,they all died after they ate all the leaves off!) but the peach tree is bare.Lots of them rotted on the tree though.Now some type of creature is eating the pears-don't know if it's rabbits or squirrels because some are very close to the ground. It's got so many pears on it the top is bent over and one limb already broke from the weight. Last year it had about 3 pears on the whole tree. Hope I get some of the pears for myself,they're better'n peaches. They're the big 'ol yellow pears,very sweet. Got some apples on the tree too (the apple tree,not on the pear tree)-at least for now.Something will probably get them too before they get ripe :angry:
  15. sounds great! I like a thick steak too. I cooked a beast brisket yesterday. Tried one once before and I coated it with my rub and smoked it in the smoker oven.It was so salty you couldn't eat it-came swimming in brine,and I put more salt on it.Yesterday I followed the cooking directions on the package and boiled it first,let it simmer for a couple of hours,then smoked it in the antifreeze smoker for a couple more hours,and it came out very good.

    we sure wouldn't have any energy concerns. Tough stuff -

    and it looks from the pictures that it was too close to home.

    I've got a huge Tulip Poplar tree on the hill just behind my house

    that had the same looking strike several years ago. Although it's a few

    hundred feet away, it was still too close.

    Thought it was a goner for a couple of years, but it's back and

    going strong despite its' scars.

    My two big dogs both freak at the sound of thunder. One heads to the basement

    and hides under the steps, and the other shakes like a leaf and crawls into bed

    with us. (At night only - during the day we don't let her into bed with us)

    Actually they're not allowed on the furniture - but I doubt if you'd keep her down in a storm.

    yeah,Otherdog (the beagle,not me) is terrified of a storm too. That's the only time Jobyna lets him on the furniture (I let him do whatever he wants,gets us both in trouble!)

    uh...by the way-why would you be in bed during the day in the first place,unless-oh...never mind...that's really nunna my bidness.I must be off. :D

  17. so much for that experiment-I was going to go to Concord today to make another mixer video to post on youtube,but Jobyna pulled something out of the refrigerator this morning and said "what tha' h! is this?-it's leaked all over the place!". D@%&! It was a boston butt I took out of the freezer Monday or Tuesday and plum forgot about. Couldn't put it back in the freezer,back to work tomorrow,so-I had to cook it,no other options. Smoked it in the antifreeze cooker to see how it worked,and :twothumbsup: Cooked it with the Neeley (The Neeleys- new show on Food Network) rib cooking method-indirect heat on both sides for a couple of hours,then I put it in a cheap aluminum pan and covered it tightly with wreynolds wrap and cooked it 'til it probed 180 degrees in the center with my meat doneness detection device (a.k.a. meat thermometer). Came out perfect! I'll probably slice some of it,and just chop the rest for bbq sammiches-I'll take some with me tomorrow,and leave Jo a little tiny piece. If I won the lottery,that's what i'd do-open a barbecue joint!

  18. oh yeah,i'm still cooking-cooked the best ribs ever just yesterday,but I used the antifreeze drum cooker. The old electric range was burned out, but it was still setting behind the shed.I replaced it with a brand new gas stove I found by the dumpster a while back. I haven't tried cooking/smoking anything really big,like a boston butt or a ham or turkey in the antifreeze cooker,but if it works ok for that i'll probably get rid of the gas stove too-to redneck looking :pat:
